savoury zucchini muffins for an autumn picnic
This year, little one started first grade. What a big, big step from kindergarten! With school getting more “serious”, we’re trying to be more creative with everything we do together outside of school hours. (This is also a moment of self-reflection for me: Cat, finish work earlier so you can close your laptop before J arrives home in the afternoon.)
One of the things we’ve been enjoying this season, in cool sunny days, is picnics - something little one is very enthusiastic about. I like that it requires a little bit of preparation and planning ahead, even though most of the time it just means a blanket under the trees behind the house, a warm kettle of tea and some baked goods straight from the oven. Sometimes it includes books and, on very (very) special days, it may include fairy lights, the laptop and a cartoon.
Here’s a recipe I’ve been visiting often throughout the years, and especially this last month, inspired by my mom’s ability to always come up with something savory and soft for every outing and special occasion.
These little muffins are perfect to pack and take along, and are even better when shared with friends and neighbors! Feel free to play with them and adapt the recipe using different vegetables, herbs and spices you have available seasonally.
Makes 9 muffins
Ingredients:
280 g zucchini, shaved
100 g wholegrain wheat flour
100 g white wheat flour
1 tsp. baking powder
50 ml olive oil
2 medium eggs, beaten
pinch of salt
herbs and spices (such as sage, oregano, thyme, paprika and powdered garlic)
grated cheese (optional)
Directions:
Combine the shaved zucchini, flours and baking powder in a a medium bowl and mix well with a wooden spoon
Add the olive oil and beaten eggs, combining until you create an homogeneous dough
Add a pinch of salt, as well as your herbs and spices of choice
Divide the dough by a well greased muffin tin, top with some grated cheese (if using) and bake in the oven on medium flame for about 50 minutes, or until the muffins are golden on the edges
Let them cool before packing.
